Just off Dawson Road in Milford, Michigan, nestled between South Hill and Milford Road, you’ll find a little roadside stand that feels more like a quiet invitation than a sales pitch. It belongs to Nicole Rall, a barefoot beauty with long, flowing brown curls and a stoneware mug of coffee in hand. Her three children buzz around her like sunlight, all of them totally at ease outdoors, with a kind of earthy calm that feels rare and real.
The stand doesn’t have a name yet—“So we’ve been brainstorming, not sure yet,” Nicole says, smiling. “I do feel like I should incorporate Einkorn into the name because that is something that makes the stand super unique.”
If you’re unfamiliar with Einkorn (𝘱𝘳𝘰𝘯𝘰𝘶𝘯𝘤𝘦𝘥 “𝘐𝘯𝘦 – 𝘤𝘰𝘳𝘯”), you’re not alone—but Nicole is ready for that. A printed sheet inside the stand reads: “Einkorn flour is an ancient grain that has never been altered, never hybridized or sprayed with glyphosate. This wheat is grown and processed in Italy. It boasts a rich, deep flavor. Higher content of vitamins, minerals, and protein. It also has a weaker gluten structure, making it easier to digest for those with gluten sensitivities.” She finishes the note with a promise: “Every ingredient is organic. This stuff is so very pure. If I wouldn’t feed it to my kids, I wouldn’t feed it to you.”
So even though the stand has no formal name, it feels just right for a place this grounded. “So, the unnamed Einkorn stand for now. TBD,” I say and she laughs.
